When something calls for a celebration, we will feast with this particular game dish from China – Peking Duck!
During a recent visit by a relative who flew halfway across the world, we decided to celebrate this get together with a simple but delicious sharing of Peking Duck. In Singapore, there is but one place famed for such a delicacy – Imperial Treasure Super Peking Duck (Paragon). This is a dish that was served to the Emperors of China’s past.
Located on the fifth floor of Paragon shopping center in the heart of Singapore’s Orchard Road, this restaurant branch specializes in Peking Duck.
It is so popular that you must place a reservation days ahead to ensure that your dining party will have the dish on the table as the restaurant has a daily limited supply.
Even so, this particular dish named after a city in China is not an expensive delicacy nowadays. It is prized for its crispy skin, which is prepared by forcing air between skin and meat, and air dried before final cooking. According to some friends from China, they felt that this is one of the best Peking Ducks that they have ever tasted.
Yet, the quality of the dish lies not just in the eating. This is a dish where the Peking Duck is carved into fine slices in front of diners, which can be a visual treat for guests as well. Not to mention the anticipation of the taste.
It is traditionally served on a plate where the diner can pick up a slice of meat and wrap it up in a flat steamed flour pancake skin filled with cucumber, spring onions, sweet sauce, sugar and garlic sauce.
The remaining duck meat is then chopped and served with fried rice or noodles. Alternatively, the diners could choose to have it packed home.
So what’s the significance of this dish? It symbolizes joy and happiness.
