My last stop on this trip proved to be a very important one. I did some research and found out that they are producing caviar in Latvia; caviar that claims to be the best in the world: Mottra! I got in touch with Dmitry, who runs the company and I was invited to come and take some shots of the production. By now you have seen how very sensitive caviar production is. To create the best caviar, Mottra breeds the sturgeons in numerous pools on the two levels of their factory near to Riga. The water needs the salt-level of the Caspian Sea and the sturgeons have to grow for at least 7 years to produce the best roe.
