Read this cooking tipster to make your own oriental roast duck!
Last month, Lomography asked their UK Cityslickers to share their favourite recipes with some analogue flare! I decided to show the world my mum’s Sweet Chinese Roasted Duck, which only needs three key ingredients + whole duck; with the help of my Diana Mini.
For those who haven’t cooked a whole duck before, usually they can cost £10+ but if you buy at the right season, it’s commonly on half-price offers and can be as low as £6 for a duck that can feed 3-4 people.
Firstly, the ingredients that you will need are:
1: A whole duck!
2: Five whole star anise
3: Four peeled whole cloves of garlic
4: Golden syrup or honey
And here’s what you do:
Step 1: Fill a kettle and set it on the boil.
Step 2: While it’s boiling, put tablespoons of golden syrup or honey into a bowl. This will become the sweet skin glaze for the duck. If you want to jazz it up, you can experiment with different flavoured honeys.
Step 3: Pour a small portion (about half a cup’s worth) of boiling water into the bowl of syrup/honey and stir to dissolve the mixture.
Step 4: Using the rest of the boiling water, hold (maybe get a friend to help with this) the duck over your sink and carefully pour the boiling water all over the skin of the duck. This helps get rid of some of the fat to make your meal a bit healthier!
Step 5: Place your duck in a deep pan baking tray, and using either a basting brush or a spoon, coat the duck’s skin with the syrup/honey water.
Step 6: Peel four garlic gloves and loosely break up five whole star anise. Use these to stuff the duck.
Step 7: Put the duck in the oven breast side down for 20 minutes on gas mark 4-5.
Step 8: Turn the duck over breast side up for the remainder of the cooking time. Use the cooking guidelines which should be provided on the duck’s packaging to calculate the cooking time based on the size of your duck.
Step 9: When it’s done, you should have a nice, deep brown, sweet Chinese-style roasted duck that you can serve with some rice and stir fried vegetables!
