How to make your own Pasta
making pasta is very simple, even if you need some time and patience to prepare it! Here's the recipe: you'll only need 1 egg and 100 g of flour per person, nothing more! mix the eggs and flour together until you get a very fine dough without any grainy texture. Then you need a pasta machine (made in Italy of course! ;) to get a very fine and long stripe. For that you begin with the thickest opening of th pasta machine and get it through 3-4 times by folding the stripe every time. Then you go on progressively to the thinest opening of the Pasta machine to get a very long and thin stripe. this can be a bit acrobatic sometimes! Just cut it in 2 if it's to long.And finally, still on the pasta machine, get the stripe cut in tagliatelles or spaghettis! Always keep the dough and cutten tagliatelles dry enough with flour to avoid them to stick together. To cook them, bring water to boil and as soon as they come back to the surface they're "al dente" but you can cook them a bit more if you like them softer of course! :)
